The bar at Azar has its own identity. The cocktail list is tight and precise, and every recipe has a name — "Made In Marrakech", "Azar Mojito", "Ispahan". These aren't renamed classics: they're original creations using Moroccan ingredients — date jam, flambéed cinnamon, orange blossom syrup, homemade orange marmalade, mint tea syrup. The menu was designed for an evening at Azar, not for any bar anywhere.
Signature Cocktails
Around ten creative house cocktails, all made from scratch. A few highlights:
Made In Marrakech — Vodka, orange blossom syrup, date and cinnamon jam, lemon juice. The house signature, which sums up Azar's identity in a single glass.
Pasha — Gin, cinnamon-infused Campari, fresh grapefruit, homemade rosemary syrup. Bitter, fruity, aromatic — for those who like cocktails with real character.
Opal — Rose-infused vodka, fresh raspberry purée with basil, maraschino liqueur, lemon juice, sparkling water. Floral and fresh — a good way to start the evening.
Salama — Coriander-infused tequila, pomegranate juice, fresh pomegranate, lemon juice, rose syrup. The pomegranate-coriander pairing is a surprise that works very well.
Azar Spritz — Aperol, grapefruit juice, cinnamon, prosecco. Azar's take on the spritz, with cinnamon as the signature touch.
Ispahan — Champagne, lychee purée, rose syrup, raspberry liqueur. For special occasions.
Non-Alcoholic Cocktails
The non-alcoholic list gets the same treatment as everything else. Four house creations:
Road To Asia — Pomegranate juice, lychee juice, lemon juice, rose syrup. Berry Zin — Raspberry purée, fresh ginger, yuzu purée, elderflower syrup, tonic. Peachea Thyme — Iced tea, peach juice, lemon juice, thyme syrup. And the classic Virgin Mojito.
Wines
The wine list covers Morocco and France, available by the glass or bottle. Moroccan labels include Médaillon, Volubilia, Domaine de Baccari, Eclipse, La Tour Roslane, Tandem and Château Roslane Les Coteaux de l'Atlas — in red, white and rosé. French options include Côtes du Rhône, Grand Cru Bordeaux, Bourgogne Pinot Noir, Haut-Médoc, Crozes Hermitage and Châteauneuf-du-Pape.

The Bar Atmosphere
The bar at Azar isn't a nightclub. It's the space that lets an evening find its rhythm — a drink while waiting for your table, a digestif after the show, a shisha to finish. The lighting is softer than the main dining room. When the show ends downstairs, part of the room naturally drifts up towards the bar and the mezzanine.
